THE DENVER STEAK IS A LESSER WELL KNOWN STEAK FROM THE CHUCK PORTION OF THE BEEF. IT IS LOCATED DIRECTLY BEHIND THE SHOULDER BLADE, AND IS NOT A HIGHLY EXERCISED MUSCLE- MAKING IT MUCH MORE TENDER THAN THE REST OF THE CHUCK. A WELL MARBLED STEAK THAT SHOULD NOT BE OVERCOOKED, AND SLICED AGAINST THE GRAIN.
