Thor's Hammer
Thor's Hammer is a creative play on beef shank. This massive cut is sure to impress. The marrow lends incredible flavor to the beef. Must be slow cooked by either smoking or braising to yield a tender and tasty meal (see recipe below).
MEDIUM: 3.5-4 LBS
LARGE: 4-4.5 LBS
COWBOY CUT: 4.5-5 LBS
GRANDE: 5-5.5 LBS
Thor’s Hammer Recipe
Preheat smoker to 180 degrees
Rub shank with seasoning oil and seasoning of choice, and smoke for 4 hours.
Remove shank from smoker, wrap in 2 layers of foil, and before sealing foil, add ½ cup of butter.
Seal foil, place wrapped shank in a foil pan, and place back in smoker at 300 degrees
Cook shank for 5-6 hours, or until internal temperature reaches 205 degrees
Remove from the smoker, and let rest for 30 minutes before opening.
